Instructions
  1. Wash vegetables thoroughly and set aside to dry.
  2. Peel sweet potatoes and cut into 1" pieces.
  3. Mix nutmeg, cinnamon and Stevia in a small bowl.
  4. Heat olive oil over medium heat in skillet.
  5. Add sweet potatoes and toss to coat in oil. Add spice mixture and mix well.
  6. Cook potatoes, stirring occasionally for 15-20 minutes. Watch closely as they will be burn easily.
  7. Portion 1/2 cup into serving dish and serve immediately. Cover and refrigerate leftovers for up to 3 days.
