Instructions
  1. Wash all fresh fruits and vegetables thoroughly and set aside to dry.
  2. Preheat oven to 350 degrees F.
  3. Remove chicken from package ad rinse well. Cut 1 large onion in half and place pieces on bottom of 9x13 roasting pan. Place whole chicken on top of onion.
  4. In small bowl, combine chopped rosemary, parsley and thyme. Cut lemon into quarters and place into cavity of chicken. Sprinkle herb mixture over chicken.
  5. Place chicken in preheated oven for 2 to 2 1/2 hours or until chicken reaches a temperature of 180 degrees internally.
  6. Serve immediately or refrigerate for up to 3 days.
