Instructions
  1. Preheat oven to 475 F.
  2. Wash vegetables thoroughly and set aside to dry.
  3. Slice okra into thirds and place in milk in medium bowl. Let sit in milk for 5 minutes.
  4. Lightly coat bottom of baking sheet with olive oil.
  5. Mix together cornmeal, flour, and cayenne pepper in another medium bowl.
  6. In small amounts, transfer okra from milk and mix in the flour/cornmeal mixture and place on baking sheet in singe layer.
  7. Bake until golden brown and crispy, 12-15 minutes.Half way through cooking time, pull out pan and flip okra on other side to cook evenly. Season with dash of black pepper.
  8. Portion 1/2 cup in serving dish. Refrigerate leftovers for up to 3 days.
