Instructions
  1. Wash all vegetables thoroughly.
  2. Over medium heat, heat olive oil.
  3. Add butter and garlic and saute for 2-3 minutes.
  4. Add shrimp, chicken stock, and Cajun seasoning and cook, stirring for about 2-3 minutes.
  5. Add peppers and scallions to pan and cook for 5 more minutes or until shrimp is no longer transparent.
  6. Serve over rice. Add lemon for flavor, if desired.
